Baker Kristof Van Haecke introduced this delicious bread at the end of 2020, and it was immediately loved. Made from wheat from the Zwinpolders, just 5 kilometers from the bakery, this local bread is a treat for everyone: consumers, the baker himself, and local farmers.
This tasty bread found its way to Bakery Philippe in Knokke-Heist at the end of 2020 and is now the centerpiece of a beautiful short-chain story, from the field directly to the baker.
The secret of the Knocks Polder Bread lies in its simplicity. Baker Kristof chose to preserve the pure taste of the wheat.
The wheat is sustainably cultivated in the Zwinpolders by Bart Lanckriet of the Zoete Polder, with great respect for nature and the environment. After the harvest, the grain is cleaned and ground inland, as there is no mill nearby that can process such quantities.
The dough of the bread, made with high-quality wheat – a German variety – and coarse sea salt, is remarkably simple.
The result is a highly appreciated bread.
The Knocks Polder Bread is not only local but also recognized as a 100% West Flemish regional product. This means that the bread meets strict standards for quality and authenticity. The bread’s logo also reflects the coastal municipality, with waves and the color of seawater as a background.
